Mastering the Art of Pig Roasts

     Roasting a whole pig is a culinary tradition that dates back centuries and continues to captivate food enthusiasts around the world. However, achieving the perfect balance of tender, flavorful meat and crispy skin used to require skill and expertise. Our roasters allow anyone to roast like a professional. In this blog post, we will dive into the art of pig roasting, providing you with valuable tips and techniques to help you master this culinary delight and create unforgettable roasted pigs for your customers, friends, and family.

 

 

 

1. Selecting the Right Pig:

    Choosing the right pig is crucial for a successful roast. When it comes to weight it depends on how many people you are feeding. Typically, you would aim for 1lb of raw uncooked pig per person. For example, if you are feeding 50 people, aim for a pig that weighs at least 50 lbs. The pig should have a good fat layer to keep the meat moist during cooking. It's also important to source your pig from reputable suppliers that prioritize quality and ethical practices.

 

 

 

 

 

 

2. Preparing the Pig:

   Proper preparation is key to achieving optimal flavor and tenderness. Start by thoroughly cleaning the pig, removing any excess hair, and rinsing it inside and out. If you go to your local butcher, all this can be done for you. Next, score the skin in a crisscross pattern to allow for better heat distribution and help render excess fat. Lastly, season the pig generously with a dry rub or marinade of your choice. Typically, we season with just salt and pepper and then hang it in a refrigerator for 24 hours and this will act as a dry brine.

3. Fire and Heat Management: 

    Controlling the fire and heat during the roasting process is essential. If using our charcoal pig roaster, ensure you have a bed of hot coals before placing the pig on the spit. Maintain a consistent temperature throughout the cooking process, typically around 400°F, to ensure even cooking and prevent the meat from drying out. Use a meat thermometer to monitor the internal temperature and adjust the heat accordingly until an internal temperature of 165°F is reached.

4. Cooking Time:

     To achieve tender, succulent meat, do not rush the process. Our roaster is already nearly twice as fast as conventional roaster so sit back, crack open a cold one, and relax. Our 1/20 hp direct drive motor allows for even cooking every time. Depending on the size of the pig it will take longer but with our machine, you can expect 20lb per hour of cooking time. For example, if your pig weighs 40 lbs, it would take about 2 hours to cook. Keep in mind that this is assuming that the roaster is up to temperature before you insert your pig or other protein into the roaster. Consider using a drip pan underneath the pig to catch any drippings to make gravy or to speed up the cleaning time

 

 

5. Resting and Carving: 

     Once the pig has reached the desired internal temperature (around 160-165°F or 71-74°C in the thickest part of the meat), carefully remove it from the roaster and let it rest for 5-10 minutes. Resting allows the juices to redistribute, resulting in more tender meat. This will also allow the pig to cool so that your customers do not burn themselves. Resting also allows customers to get a good look at the roasted pig and is a great time for pictures and videos. After all, a pig roast is just as much about the wow factor as it is about great food. When carving the pig, you can use an assortment of tools. We use tongs and scissors, but you can use a large knife for more theatrics. Scissors are crucial for cutting and removing the skin but also is very efficient with removing the meat.
